Instructions
Slice avocados lengthwise with a sharp knife and remove the pits. Scoop out the flesh of the avocados with a spoon and place in a mixing bowl.
Using a fork, mash the avocado into a half chunky and half smooth mixture. Add fresh squeezed lime juice and mix together.
Add salt, cumin, minced garlic, red onion, cilantro and diced tomatoes. Stir gently until combined. Add diced jalapeño if desired.
Taste the guacamole and add additional salt if needed. Serve immediately with tortilla chips, or cover guac directly with plastic wrap and place in an airtight container to avoid a brown top layer. Refrigerate until ready to serve.
Notes
Use the freshest ingredients possible.
Always use lime juice that is squeezed directly from a lime, not from a bottle.
Choose ripe avocados.
Mash avocado with a fork to get the best consistency, then add other ingredients.
If tomatoes are too juicy, drain them with paper towels to avoid a watery dip.
When storing, drizzle guacamole with lime juice, then press plastic wrap directly onto the top of it to prevent brown spots from forming.
