Make It Yours
🌶️ Add More Spice: Love heat? Stir in a dash of your favorite hot sauce or crushed red pepper flakes.
🌽 Add Veggies: Mix in a can of sweet corn or black beans for a heartier version.
😀 Lighten it Up: Use low-fat cream cheese and cottage cheese instead of the regular versions for a lighter dip.
Dip Tips
- Drain the Ro-tel: Extra liquid can water down the dip, so be sure to drain the canned tomatoes thoroughly.
- Soften the Cream Cheese Fully: Soft cream cheese blends more easily and prevents lumps, giving your dip that perfect creamy texture.
- Chill Before Serving: For best flavor, let the dip chill in the fridge for about an hour after mixing – it helps the flavors blend well!

Recipe FAQs
Boat Dip is designed to be served chilled for best results. Since it contains cream cheese, you can definitely bake it, but it’s easier to pack for the beach if it’s cold.
Freezing is not recommended. Due to the dairy content, the texture may become grainy once thawed.
Storage Notes
- Make it ahead and store in an airtight container up to 2 days in advance.
