Of all the dips I’ve made over the years, this Velveeta Rotel dip recipe is the one that everyone goes crazy over. It’s my favorite appetizer for every sports party and holiday event. I also love that you can make it ahead, which means I can just dump everything in a crockpot and forget it!

Ingredients
- 1 pound ground beef - (browned and drained)
- 32 ounces Velveeta cheese - (cubed)
- 8 ounces cream cheese - (cubed)
- 10 ounce can Rotel tomatoes with green chiles - (do NOT drain)
- 2 teaspoons ground cumin - (can sub taco seasoning)
- ½ teaspoon garlic powder
Garnish
- diced peppers, ground beef, chopped green onions - (optional)

- sweet peppers, tortilla chips - (optional)
Instructions
- Cook ground beef, then drain. Add it to cubed Velveeta cheese, cream cheese, Rotel tomatoes with juice, ground cumin and garlic powder in a slow cooker.
- Cover and cook in slow cooker for 2 hours on LOW or 1 hour on HIGH. Stir several times to break up any lumps. Continue to cook on low until completely melted. Once the mixture is melted, set to WARM so the cheese won't harden during your party.
- Garnish with diced peppers, extra ground beef and chopped green onions if desired. Serve straight from the slow cooker with dippers.
- If preferred, garnish and serve in a decorative dish with tortilla chips and sliced sweet peppers.

I’ve tried alot of recipes for Rotel dip, but this one is the best! The cream cheese makes it really creamy, and it stays warm and easy to dip for hours.
